Learn to craft elaborate Lambeth-style heart cakes with traditional coil, shell, ruffle, and swag piping techniques at Simply Scrumptious Cakes & Classes, based in Eccleshall, Staffordshire. Professional baker Liz Berwick runs this intimate baking school from her home kitchen, where she has been teaching decorating skills for over a decade.

The school specialises in cake baking, cake decorating, and cupcake classes across all skill levels. Classes range from beginner-friendly cupcake masterclasses to more advanced pressed flower and ombré cake workshops. The teaching covers both fundamental skills like making perfectly light buttercream and colouring techniques, alongside sophisticated decorating methods including chocolate drip finishes and botanical cake design.

In the three-hour Cupcake Bouquet Class from £99, students transform a dozen pre-baked cupcakes into an artistic arrangement, learning to create chocolate drip effects and master piping techniques. The Pressed Flower Cake workshop from £110 teaches students to identify edible flowers and foliage, press them properly, and create balanced designs on layered sponge cakes. Those tackling the Luxury Ombré Cake class learn gradient blending effects with buttercream and optional white chocolate drip finishing. All classes include equipment, ingredients, refreshments, and sturdy transport boxes for taking creations home.

Classes are deliberately small, with cupcake sessions limited to five participants and large cake classes capped at three, ensuring personal attention throughout. The school uses organic, locally-sourced, and Fairtrade ingredients where possible, and can accommodate dietary requirements. This suits beginners seeking fundamental skills, intermediate bakers wanting to expand their repertoire, and even cake business owners looking to diversify their offerings.
