Hunters of Holt

Gary Hunter - UK Chocolate Ambassador for Barry Callebaut and Master Chocolatier - directs the programme at Hunters of Holt, based at Home Farm House in the North Norfolk countryside near Fakenham. Chocolate runs deep through the curriculum: the Hunters Chocolate Experience brings participants into the production kitchen for a three-hour session covering how chocolate is made, a tasting of different varieties, and a demonstration of chocolate truffles, while the four-hour Decorative Chocolate and Sugar Creations course sees Hunter demonstrate competition and judging techniques for decorative work. Bread and patisserie sit alongside: the Macaron Course tackles the crunchy-outside, soft-inside balance in three hours, the Artisan Bread and Italian Bread and Pizza classes each run to a full seven hours - the latter working through ciabatta, focaccia, and sweet and savoury pizzas - and the full-day Christmas Baking with Gary Hunter covers professional get-ahead techniques for the festive season.
