The programme spans single three-hour workshops to intensive multi-day courses, accommodating every skill level from complete beginners to experienced bakers. Weekend workshops include specialist classes like Cinnamon Buns, where you learn mixing, shaping, filling and baking techniques to create Swedish Cinnamon Knots and Cinnamon Swirls with streusel topping. The Introduction to Bagels workshop teaches the unique cooking method that gives bagels their characteristic chewy texture, covering both all-purpose and sweet varieties. For doughnut enthusiasts, the Doughnut Workshop with Kevan Roberts focuses on custard fillings, including classic crème pâtissière and caramel custard, topped with crunchy honeycomb. Full-day courses explore international traditions with remarkable depth. The German Baking class with award-winning baker Emmanuel Hadjiandreou covers seeded spelt sourdough with traditional lye bath pretzel-making using a safe bicarbonate solution, plus prune and pepper rye bread with steam baking techniques. The Easter Baking session produces traditional Hot Cross Buns alongside Dark Chocolate and Orange variations, plus Greek Tsoureki plaited bread with fragrant sweet spices. The intensive three-day Artisan Bread Baking course creates ten different loaves from wholemeal to brioche, baguette to rye sourdough. Multi-day courses include residential options and corporate programmes, with gift vouchers available and private hire facilities in the rural farm setting.
