Pauline Macarons

Macarons are the entire focus at Pauline Macarons, a small-group workshop space running from Unit 115, Victory Business Centre in Portsmouth, with sessions capped at eight participants. The flagship Bake, Fill and Decorate: The Full Macaron Masterclass (£80, 2.5 hours) takes you through shell-baking from scratch, piping fruity buttercream fillings - cherry, mango and passion fruit, strawberry - and decorating, with troubleshooting guidance from Pauline throughout; you leave with a box of around 25 macarons worth £40. The Vintage Cake & Hand-Painted Macaron Workshop (£55) adds a decorative dimension, combining cake work with hand-painted macaron techniques.
